Cozy Dutch Oven Pot Roast

Some meals make the whole house feel warmer, and pot roast is one of them. It’s the kind of dinner that asks for a little patience but very little fuss: sear the beef, add the stock and vegetables, cover the pot, and let the oven slowly bring everything together.

A Dutch oven is perfect for this because it holds heat well and keeps the roast surrounded by its savory cooking liquid. After a few hours, the beef becomes tender enough to pull apart with a fork, while the onions, carrots, and potatoes make it a hearty one-pot meal.

Why You’ll Love This Pot Roast

This recipe is comforting, filling, and made with simple ingredients. Everything cooks together in one pot, so cleanup is easy and the vegetables take on all the savory flavor of the beef and stock. It’s also a great meal for a relaxed evening: once the pot is in the oven, you can let it cook while the delicious aroma fills the kitchen.

Dutch Oven Pot Roast

Dutch Oven Pot Roast

Serves: 6
Prep: 20 minutes
Oven: 325°F (about 165°C)
Cook time: About 3–4 hours, until fork-tender

Ingredients

  • 3–4 lb beef chuck roast
  • Salt and black pepper
  • 1–2 tbsp oil
  • 1 onion, cut into wedges
  • 1 bag baby carrots
  • 1 bag small potatoes; halve any that are larger
  • 3–4 cups beef stock
  • 1 packet ranch dressing mix

Method

  1. Heat the oven to 325°F. Pat the roast dry and season generously with salt and black pepper.
  2. Warm the oil in a Dutch oven over medium-high heat. Sear the roast on all sides until nicely browned, about 3–4 minutes per side.
  3. Pour in the beef stock, scraping the browned bits from the bottom of the pot.
  4. Add the onion, carrots, and potatoes around the roast.
  5. Sprinkle the ranch dressing mix evenly over the beef and vegetables.
  6. Cover the Dutch oven and transfer it to the oven. Cook until the beef is fork-tender, about 3–4 hours.
  7. Serve the roast and vegetables with the savory cooking juices spooned over the top.

Tip: For firmer carrots and potatoes, add them during the last 1½–2 hours of cooking. Add them at the beginning if you prefer softer vegetables that absorb more flavor. If the roast is difficult to pull apart, cover it and cook a little longer. Serve on its own or with crusty bread.

This Dutch oven pot roast is the kind of comforting, home-cooked meal that brings everyone to the table. After a slow afternoon in the oven, the beef turns tender and flavorful, while the vegetables soak up all those savory juices.

Cornbread topping:

Prepare Jiffy cornbread mix according to the box directions. Divide batter over the pot roast in two oven-safe bowls and bake according to the package instructions. I add about 20 minutes (until the topping is browned). This is such a great addition to soups too!
