Served as an appetizer or a meal these cream cheese peppers are so delicious.
Make your own cheese! It’s healthier and doesn’t have all the yucky additives of store bought cheese. This cheese is delicious on salads and to use in other recipes.

To make: Bring 1/2 gallon of whole milk to a boil being careful not to let it stick. Then turn the heat down to medium and add in 1/2c of vinegar. Stir the mixture and as the two mix you will see little cheese curds forming. You will need a strainer to get these out or pour the pot into a small hole colander.

You can leave as cheese curds or push them together into a mold or ball using a cheese cloth. Chill in the refrigerator before using to make it firmer. I added in fresh herbs when I made my cheese ball and it was delicious!

Meatball Sliders

Meatball Slider Recipe

Slice French bread, top each slice with a slice of fresh mozzarella cheese and toast. Remove from oven and add one meatball on a stick per slice to the top of melted cheese. Sprinkle with Italian spices and serve.

These are the easiest and most delicious 3 ingredient BBQ meatballs featuring Virginia Diner BEAR Jam🤤

You will need:
•1 jar of Virginia Diner BEAR Jam
•1 bottle of your favorite BBQ Sauce
•Frozen Meatballs

Turn your crockpot on high. Place frozen meatballs into the crockpot. Pour in 1 jar of Virginia Diner BEAR Jam and top with 1 Bottle of your favorite BBQ Sauce. Add any desired pepper or spices. Cook for 2-4 hours on high or you can cook for 4-6 hours on low. So delicious!

Peanut Encrusted Tuna Featuring Virginia Diner Peanuts

Peanut Encrusted Tuna

•1 fresh tuna steak (sushi quality if you plan to not fully cook)

•1/2c Virginia Diner Sea Salt and Black Pepper Peanuts chopped

•2 teaspoons soy sauce

•1 teaspoons brown mustard

•1 teaspoons black sesame seeds

•1 lime

•Cooking oil of choice

In a small bowl combine soy sauce and brown mustard. Brush the mixture onto the tuna steak covering both sides and edges and then sit it aside. Pour the Virginia Diner peanuts into a food process, using a grater add a little lime zest to the peanuts, then cut the lime in a couple slices (set slices aside) and add a generous squeeze of lime juice. Grind peanuts until they reach the consistency of bread crumbs. Using your hand coat the tuna steak liberally with ground peanuts.

Bring cooking oil of choice to a medium/high heat in a skillet. Place tuna steak into the oil once heated and brown tuna on both sides. I recommend lightly browning the tuna and leaving a pink center. Remove tuna from pan, place on dish and cut into slices. Garnish with lime slices and remaining soy/mustard combination if desired and serve. Enjoy!

Note: This dish can be used as an appetizer with 1 tuna steak or multiples for a main dish over rice or Asian noodles. The recipe can be adapted and the fish cooked to your desired temperature as well. Easy Corned Beef and Veggies

☘️In a pot add 8 cups of vegetable broth and spices of choice. I like to use fresh basil, garlic, onion, pepper, mustard seed, cloves and bay leaves.
☘️Add 3 large chopped carrots.
☘️Bring pot to a boil.
☘️Carefully place an uncooked corned beef brisket in the pot and continue to boil for 5 minutes.
☘️Remove corned beef brisket from the pot and set aside.
☘️Carefully pour liquid, spices and carrots in a crockpot set on low.
☘️Add corned beef brisket to the crockpot with a small bag of potatoes.

☘️Cook on low for 6 hours.
☘️Remove corned beef brisket from crockpot and let cool.
☘️Slice the corned beef brisket against the grain.

Serve corned beef with cabbage, potatoes, carrots and cornbread 💚 I cook my cabbage separate with a ham hock and not the corned beef, but you can boil your cabbage with the corned beef and carrots.

Let’s make the Virginia Diner’s
World Famous Peanut Pie
You will need:
1 1/2c Light Karo Syrup
1/2c flour
3 eggs
1/2 lb of crushed salted @vadinerpeanuts
1c sugar
2 tablespoons melted butter
1 frozen pie shell

Preheat oven to 350. Mix eggs, butter, sugar and flour in a bowl. Add in crushed salted Virginia Diner peanuts and light Karo syrup and throughly mix together. Pour mixture into unbaked pie shell and bake at 350 for an hour and fifteen minutes (center will be firm). Serve with vanilla ice cream or whipped topping ❤️🥜 Don’t forget to like and follow!
