Hot Honey Grilled Peach Brie

 Ingredients

– 1 wheel of brie cheese

– 1/2 jar of FERIDIES peach halves

–  Drizzle ARS Peach Hot Sauce (adjust to taste)

– 2 tablespoon olive oil

– Fresh basil for garnish (optional)

 Instructions

♨️Preheat the Grill: Heat your grill to medium-high.

🍑 Prepare the Peaches: Slice the FERIDIES peaches into thin wedges.

🧀 Prepare the Brie:Lightly brush the brie cheese with olive oil to prevent sticking.

🔥 Grill the brie: place the brie wheel directly on the grill grates. Grill for 2-4 minutes, or until the cheese starts to soften and develop grill marks. Watch carefully to avoid melting it completely.

🍴 Grill the peaches: Place the peach slices in a cast iron pan and set it on the grill. Grill the peaches for about 2-3 minutes per side, or until they develop a nice char and are slightly softened. Cut peaches into smaller pieces as desired.

🍯 Drizzle ARS Peach Hot Sauce over the peaches. Adjust the amount of hot sauce based on your heat preference.

🍽️ Assemble the Dish: Place the grilled brie in the cast iron pan and use a spoon to spread excess sauce into brie. Top with the grilled peach slices.

🌿 Garnish:If desired garnish with fresh basil.

🤤 Serve immediately with crusty bread or crackers. Enjoy this sweet, spicy, and creamy treat!

FERIDIES Sweet Fire BBQ Chicken and Sweet Corn Salad

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup FERIDIES Sweet Fire BBQ sauce
  • Salt and pepper to taste

For the Corn Salad Base:

  • 4 ears of sweet corn, husked and cleaned
  • 1 cup shredded cheese (cheddar or a Mexican blend works well)
  • 1 cup crushed tortilla chips
  • Juice of 1 lime
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of water to a boil. Add the sweet corn and cook for about 5-7 minutes until tender. Remove the sweet corn and let it cool slightly. Once cool, use a sharp knife to cut the sweet corn kernels off the cob and place them in a large bowl.
  2. Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Place the chicken on the grill and cook for about 6-7 minutes on one side. Flip the chicken and baste the top side with Sweet Fire BBQ sauce. Cook for another 6-7 minutes, basting again as needed, until the internal temperature reaches 165°F (75°C).
  3. In a serving bowl, create a base with the corn kernels. Slice the grilled chicken and place it on top of the sweet corn. Add the shredded cheese, crushed tortilla chips, and a squeeze of lime juice over the chicken. Finish with a dollop of sour cream on top. Enjoy 🙂

Cream Cheese Peppers

Served as an appetizer or a meal these cream cheese peppers are so delicious.

Make Your Own Cheese

Make your own cheese! It’s healthier and doesn’t have all the yucky additives of store bought cheese. This cheese is delicious on salads and to use in other recipes.

To make: Bring 1/2 gallon of whole milk to a boil being careful not to let it stick. Then turn the heat down to medium and add in 1/2c of vinegar. Stir the mixture and as the two mix you will see little cheese curds forming. You will need a strainer to get these out or pour the pot into a small hole colander.

You can leave as cheese curds or push them together into a mold or ball using a cheese cloth. Chill in the refrigerator before using to make it firmer. I added in fresh herbs when I made my cheese ball and it was delicious!

Peanut Encrusted Tuna Featuring Virginia Diner Peanuts

•1 fresh tuna steak (sushi quality if you plan to not fully cook)

•1/2c Virginia Diner Sea Salt and Black Pepper Peanuts chopped

•2 teaspoons soy sauce

•1 teaspoons brown mustard

•1 teaspoons black sesame seeds

•1 lime

•Cooking oil of choice

In a small bowl combine soy sauce and brown mustard. Brush the mixture onto the tuna steak covering both sides and edges and then sit it aside. Pour the Virginia Diner peanuts into a food process, using a grater add a little lime zest to the peanuts, then cut the lime in a couple slices (set slices aside) and add a generous squeeze of lime juice. Grind peanuts until they reach the consistency of bread crumbs. Using your hand coat the tuna steak liberally with ground peanuts.

Bring cooking oil of choice to a medium/high heat in a skillet. Place tuna steak into the oil once heated and brown tuna on both sides. I recommend lightly browning the tuna and leaving a pink center. Remove tuna from pan, place on dish and cut into slices. Garnish with lime slices and remaining soy/mustard combination if desired and serve. Enjoy!

Note: This dish can be used as an appetizer with 1 tuna steak or multiples for a main dish over rice or Asian noodles. The recipe can be adapted and the fish cooked to your desired temperature as well. The unique cooking style of Virginia Diner peanuts makes them the perfect peanut to cook with because they are both savory and crunchy.

The Virginia Diner is an iconic brand in my area of Virginia and I greatly appreciated being gifted some of their delicious peanuts. You can pick up a can of your own peanuts local inside the Virginia Diner shop in Wakefield, Va or ordered online at http://www.vadiner.com 🥜
